Are there still caterers that do a BBQ on open fire?

I was at a wedding this weekend and they had caterers there that was cooking all the food on gas. I just think that for a wedding an open fire would look much better and suit the atmosphere. I鈥檓 getting married next year and hope to find caterers that will cook our food on open fire.Are there still caterers that do a BBQ on open fire?
Catherin, I am across the world from you, and I know for a fact you do have such caterers. Like under the Catering heading in your yellow pages. You will find they cater the whole function.
The reason the caterers use gas as opposed to an open fire method is that with gas, the temperature can be easily controlled, so food cooked more evenly. An open fire would work, but unless whatever is being cooked is uniformly shaped, there is the risk of some under cooking or overcooking. I know atmosphere is important at a wedding, but wouldn't properly prepared food be key in having a memorable wedding for an even better outcome?!Are there still caterers that do a BBQ on open fire?

Understand this: Caterers do not want guests in close proximity of the food and cooking process. They need their space and to spend undivided attention on cooking good quality food for everyone and do not want guests interfering with their job and time line. BBQ's also make a lot of smoke at times and this is not what you want your guests to have to deal with, so the BBQ will most likely be set up away from the crowd.
