Hi, I'm planning a wedding in May and am looking for a Chinese caterer that offers food, waiter service and table settings. My fiance and I are having a wedding on the roof of his office building, but there is no kitchen facilities whatsoever - everything would have to be brought in from the outside. Looks like you have some good answers here for Chinese Caterers. I'd also check places like get Married and their Local resources area for NYC at http://www.getmarried.com/local-resources/New_York_Metro.htm and they also have a store at http://shop.getmarried.com that sells Asian wedding favors like personalized fortune cookies, chopsticks, paper fans, etc that would be a nice touch if this is the direction you're going with your ceremony.
