See if there's an L%26amp;L Hawaiian in your area. If not, look u Hawaiian food under http://cityguide.aol.com/
I don't know of any luau caterers in your area but here's an avenue that might point you in the right direction:

Go to the Fresno yellow pages and look up "Dance Studios" or "Dance Instruction". See if there's a listing for Polynesian or Hawaiian, or Hula, or Tahitian.

If there is one, call and ask to speak to someone there who might know of a caterer specializing in Luaus.

Very often, student dancers from those particular dance studios perform at luaus; and what's a luau without food!!!

It's a shot in the dark but worth a try.
