How much do you pay your caterer in advance?

I am planning my wedding and am meeting with our caterer soon. We haven't discussed payment yet and I wanted to get an idea of the general practice with paying a caterer for a wedding. Is there usually a downpayment, or...? If so, how much? Or does it really vary?

I paid all up front. remember it insures quality service when you pay upfront cause then they owe you service. And that put pressure on them o perform better.How much do you pay your caterer in advance?
