just tell them that though you would like to work with them in the future, for this particular event you will be going with someone else who specializes in the cuisine that is required.

Just be professional about it. Something like...."I / We would like to inform you that will not be working with you on......(enter name of event). We selected another vendor this time for this particular event. We recognize your reputation is one of quality. We value our relationship with.........(enter name of catering service) and would like to extend consideration for some of our future events. Thank you for your time."
be tactful but honest. Let them know that someone else has a prep style that is better suited to this particular event. Thank them for their time and interest and let them know you would like to work with them on future events where their skills better match your needs :)

It was close and making my decision was very difficult, but unfortunately at this time I must imform you that I will be using a different caterer that has touched all the bases for this particular event. Please do not construe this one decision on my part as any type of negative review on your great qualifications or excellent reputation as a caterer. I do want to express that I have an open wiliness to engage you in the future as caterer for other events that I will be handling. Thank you for your time, efforts and cooperation in responding to my requests for possible assistance in this event.
