There are ranches on the outskirts of town that you can rent for a day or a weekend that usually come with some form of optional banquet hall or covered picnic awnings. Check the list of area members of the Kansas City BBQ Society. I know there is a lot of members in the state of Texas and a lot of them cater things like this.
They are very good at what they do also.
