Any good caterer will be able to guide you with this choice. They know what goes over with a particular sort of crowd and know your budget. However, it's usually best to serve chicken with a vegetable of some sort, a tossed salad and a starch (pasta, rice, etc). The most expensive part of the meal is usually the meat so the accompaniments shouldn't break the budget. Try a fruit salad, melons, grapes and strawberries, everyone loves that. Maybe some grilled bread, I like to take a loaf of fioccica (not sure of spelling but your catrerer can probably figure it out) slice it half and smother in butter, then grill it until it's crispy. Add a pasta salad in an italian dressing with cucumbers, tomatoes and peppers. You could also try a large salad so guests can pile their chicken on top of greens for a grilled chicken salad, and include a variety of dressings. you can always go southern and do potato salad and baked beans with some biscuits on the side.
Afredo pasta is a nice side dish. You'll want to include a vegetable, baked potato and a dinner roll with individual butter pats if it is a buffet. If you are trying to make it cheap - you can drop the baked potato and the pasta- but the salad gives it the feel of a rounded meal with something for those who don't like chicken. You can use any kind of bread in replacement of rolls. You can also buy some food on your own at a club store inexpensively in bulk if your caterer allows it. My caterer allowed me to make my own pasta side dish. All they had to do was put it in a chafer. It saved alot of money and was really good! You can buy your own bread too. It is also nice for a wedding to offer a salad. But, it doesn't have to be the traditional garden salad. You could do an Asian green leaf salad with walnuts and fruit, ceasar salad or a salad made like one you've enjoyed in a restaurant. Individually served meals generally are made a bit more classy with fresh parsley sprigs or other garnishments like chopped green onion or cherry tomatoes. If you serve salad on a buffet, don't have it include eggs and make sure to have the dressing in individual packets on the side so that you don't have it sitting out too long and making people sick. I would think that if you have a good caterer they would recommend something similar and show you how to stick to your budget while offering a rounded meal. Pasta is easy for a friend or family member to do a day ahead in the right size aluminum pan and refrigerate. Then the caterer simply heats it in the oven and drops it in the chafer.
I would serve some roasted red potato's and fresh steamed veggies.
