I have to make the salad later this week for our team's spaghetti dinner- yikes! These are just small side salads, nothing fancy, just a scoop or two. I plan to use heads of iceberg lettuce, carrots, cucumbers and tomatoes. All you caterers out there, roughly how much of each ingredient will I need for roughly 1 cup of salad a person, if we're planning for 300? 10 points for the clearest, most accurate answer! Thanks in advance~
PS- I am guessing 30 heads of lettuce, 6 lbs of carrots, 20 cucs, and 35 tomatoes?How much of the ingredients will I need for side salads for 300?
I use:
1 head of iceberg for 10 people.
One shredded carrot per 20.
Two slices of cucumber per- about 10 portions per cuc.
Cherry toms work well, just one per salad.
For 300= 30 iceberg
15 carrots
30 cucumbers
300 cherry tomatoes

Okay first you need 40-45 heads of lettuce, 15 lbs. carrots, 25 cucs, and at least 60 tomatoes.
Even if you get 25 slices out of each cuc that's only 625 slices, just over 2 per salad, 60 Tomatoes wedged into 6 pieces gives you 360 wedges or 1.2 per salad.
The carrots you can get away with 8-10 pounds if you grate them.
