You can have a caterer make a 2 trays of pasta and grill 2 trays of chicken (and serve it buffet style) for 75 and it could cost $200 or so.
Or, you could have the caterer create a 4-Course sit down dinner for 75 people w/ Shrimp Cocktail, Filet Mignon w/ Lobster and complete dessert buffet plus cake and it could cost $100 or $150 per person.

In Napa or the Bay Area this same menu although it is all No. Calif. would be $40.00 per guest. So prices vary widely based on your food choices and level of service. If the caterers do all of the set up and tear down it costs more than if they drop the food off. But some one still has to set it out serve it and clean- up ....
