Fruit tray with dip
Veggie tray with dip
Pasta salad
Little meatballs in bbq sauce can be kept warm in a crockpot.

You must ask your stepmother this question. She is a caterer, and she knows what she does best. Don't give her a list! Ask her to give you a list of things she can do well in the circumstances you describe.
Lasagna with and without meat is quick as easy and inexpensive. Also ravioli and chicken parm are good options. Also have a salad made for the first course.
artichoke dip with bread or crackers, a cold pasta salad and finger sandwiches with fancy tooth pics in them. A chocolate fountain with a pyramid of strawberries and other fruits.
Ham, Caesar salads, potato casserole, and rolls.
