I am meeting with a potential caterer to plan a buffet dinner, what questions do I ask?

I know what we are looking for in a meal, but are there questions that I may be forgetting? Has anyone wished they had asked certain questions?

These questions are geared more for if it is an in-house caterer, rather than an outside source.



1) How long will the buffet be open?

2) When do they restock food options? When the food is completely gone, halfway gone, 3/4 gone...?

3) What kinds of beverages do they offer?

4) How flexible are they in changes?

5) Do they provide waiter-attended service (someone to take care of the buffet table during the dinner). How much extra does it cost?

6) Will they be setting the buffet table? What options do you have in linens and decorations?

7) Will they be setting the guest tables/providing silverware, tableware, and linens? If so, what options do you have for color, style, etc?
I pretty much agree with the others. The most important thing, however, is to make sure you've googled their name and read through any online reviews. These days, almost everyone gets rated at places like yahoo, yelp, etc. and this is where you'll get your best info.



In fact, it can even help with the questions you ask. For example, if a lot of reviewers complain that the fettuccini was disgusting because it was cold, you could point this out and ask if they're aware of this complaint and what they've done to remedy it.



And if the reviews appear to come from credible reviewers and they're all good, you may not have to worry so much about a lot of questions, since they clearly know what they're doing.I am meeting with a potential caterer to plan a buffet dinner, what questions do I ask?
how much do I need for x people. how many servers are you providing. if you are not familiar with the caterer's reputation get references from previous customers. Do you take cash or credit. Now, or at he time of the event. Is tipping of servers customary. Do you have backup personnel, if someone is sick, quits, gets fired, or goes on vacation. are you FULLY insured.(fire, theft, liability, no show)
Be sure to ask about the staff they will have present before during and after. Also, exactly how will the serving tables be set up. Exactly when will they arrive to set up. Don't be afraid to ask about every stinkin' detail. You shouldn't have to be concerned about anything on your day.
Don't forget to ask about clean up .

At my wedding luncheon our caterer served an amazing chicken w/ cheesy sauce and ham slices. Any recipes?

INGREDIENTS

6 skinless, boneless chicken breast halves

6 slices ham

3 tablespoons all-purpose flour

1 teaspoon paprika

6 tablespoons butter

1/2 cup dry white wine

1 teaspoon chicken bouillon granules

1 tablespoon cornstarch

1 cup heavy whipping cream

shredded swiss cheese





DIRECTIONS

Pound chicken breasts if they are too thick. Place a ham slice on each breast within 1/2 inch of the edges. Fold the edges of the chicken over the filling, and secure with toothpicks. Mix the flour and paprika in a small bowl, and coat the chicken pieces.

Heat the butter in a large skillet over medium-high heat, and cook the chicken until browned on all sides. Add the wine and bouillon. Reduce heat to low, cover, and simmer for 30 minutes, until chicken is no longer pink and juices run clear.

Remove the toothpicks, and transfer the breasts to a warm platter. Blend the cornstarch with the cream in a small bowl, and whisk slowly into the skillet. Sounds like chicken cordon blu or a variation. You could stuff pounded chicken breasts, put a slice of ham on each breast, fold and bread-fry or bake. I have arranged for entertainment, outside caterers and bar for company parties and believe it or not, its cheaper than you think.... and avoids the stress at this time of year. As you are looking for a particular type of food, depending on where you live, most caterers will have either cooked this before, or maybe willing to try. An outside caterer will do this, but at this time of year, they might be very busy?

    You must ask your stepmother this question. She is a caterer, and she knows what she does best. Don't give her a list! Ask her to give you a list of things she can do well in the circumstances you describe.
    Lasagna with and without meat is quick as easy and inexpensive. Also ravioli and chicken parm are good options. Also have a salad made for the first course.

    How can I deal with a 3rd party by grud affecting business?

    I provide equipment to caterers for their events. 5 years ago, there was an event at a hall that my company (not owned by me yet) provided service to the caterer for the event. The driver at the time left a bad impression on the person in charge of the hall. Since I purchased this business, I have to say, the service has increased dramatically and sales have been impressive. We have serviced caterers to their satisfaction and I have now heard from 3 different caterers that the hall manager is discouraging the renter form using our service, but it is the high-class caterer that is requesting our service, not the hall manager. We still have been able to provide the service and no screw-ups. The hall manager is still telling bad tells. How would you handle this? Consider that if I go over that persons head, which has been there for many years, they will most likely try to hurt our business even more. Talking to the hall manager has gotten NO WHERE.     I would take the Hall Manager out to lunch and very nicely ask him how you can work TOGETHER to get more business.

    Every wedding venue I've been to, they want me to use their own exclusive caterer. I cannot because of cultural reasons and it is frustrating. I did find one venue that would allow me to use any caterer of my choice, but the rental fee is much pricier and they charge an extra fee for using an outside caterer.     The main reason venues require their own caterer used is for insurance reasons, it is considerably more risky for them to use and outside caterer, have something go wrong, then the venue gets all the blame from the victim, not the outside catering company. Have you talked with their catering companies to see if their catering staff can meet your guidelines or are able to work with a head chef that is from a culturally approved caterer?
    It depends on where you look. For me, I had to go out of my state of VA to NC to find a venue and even there they want me to use their caterer. However, the plate price per person is a whole lot cheaper than Va. I was hearing anything from 4,000 to 8,000 for a venue with the food, minus the drinks and i thought that was a little crazy. Most places, especially if you are looking at hotels, resorts, and inns, are going to want you to have their caterer. I don't really know why but it's something that I may have to live with. Did you bring up the issues about the cultural differences? Maybe they will be willing to go by what you need as opposed to a set menu because at the end of the day, it is your wedding and since they are forcing a cook down your throat they can at least adhere to your guidelines. That is going to be hard, but there is nowhere, specifically, to look. Only you know your area and you will just have to get in the phone book and start calling people. If you are having the wedding in a church and then having the reception elsewhere you could choose to have the reception at someones house maybe, if you know someone with a big enough home or yard, then you can get whatever caterer you would like. That seems to be the only recourse in this situation and I was planning to do just that until I found my location. It will be hard but don't give up.     If you are getting married in a church then have your reception in the church hall and it would allow you to have an outside cater and your guest do not need to travel to get to your wedding reception.
    Depends on where you live actually, but some suggestions, for instance where I am located Volunteer Fire companies rent there communitie gathering areas for wedding receptions same as most churches there meeting halls are great for this, hope it helps.

    Not tacky at all...

    Here's some things to think about:



    Is the ice cream being served at the table as a dessert or will there be a station for guests to pick up their own if they want it? This will make a difference. If it's served it is then presumed that it is the dessert and most people will eat it, making them feel a sense of "I've already had dessert."



    As far as the cake goes, I'm an advocate of always having a wedding cake at the reception. It is tradition and some bad "bad luck" not to have one, if you believe in such a thing. I would however, take into account a few factors. One, which we've already discussed, is the ice cream and strawberries being served as a dessert? Two, know your guests. Are they younger, older, a lot of children, drinkers? Older folks and children tend to eat more cake than others. If you have quite a few drinkers, don't even expect them to realize there's a cake there... alcohol and cake don't mix for some reason.



    In my experience with your situation, having a plated dessert should definitely decrease the size of your wedding cake. After you go over your guest list and really see who your guests are, you will be able to make a better decision about the size of the cake. Most weddings I've ever been to, the cake has not been finished.



    If I had to make a guess of how big to get the cake without knowing any of the factors I've discussed, I would say get enough for about 100-110 servings.

    A traditional wedding should have a wedding cake. Its okay to have family do extra baking that could sit by the coffee urns, but everyone expects a wedding cake regardless of the additional treats, baked goods, chocolate fountain, etc. You should ideally have a big enough cake to feed each and every guest.     People just seem to expect cake at a wedding. I'd still get it large enough for everyone to have a sliver of cake with their ice cream .....OR, just do a very small cake for the 2 of you, and serve petit fours that match the cake with the ice cream for your guests. But, you really can't have some cake and not have enough to serve everyone at least a small piece......
    As long as there is there is ice cream for everyone, it is perfectly acceptable to have a smaller cake. Those who want it will eat it and those who don't will stick with the ice cream. If the cake was your only dessert, you would need to have enough for everyone.

    If that is too spicy for them add BBQ Sauce. My favorite is Sweet baby Ray's Chipotle Sauce.

    I'm guessing you mean "fried" and not "dried"?? Choice one is to have the ranch dressing out as a dip and hope it's used. Otherwise consider tossing them in a BBQ sauce %26amp; a splash of tabasco - a bit messier, but should conquer some of the dryness.
    Toss with a sauce. Teriyaki, B-B-Q would be tasty. Toss with the sauce then heat. Or heat the sauce and add the wings. Hot sauce would be good as well-don't know if your daughter and friends would like the real hot stuff. The hot wing sauce is hot sauce and butter.
    Make pizza wings!



    Put the fried wings on a pizza pan, arranging them into "pizza" type slices.. Cover with pizza sauce and sprinkle with mozzarella cheese. Bake until cheese has melted, then serve them on the pizza pan



    Tell them that they are Pizza WIngs! They will love it!



    P.S. I am a caterer and I want to know if my clients are satisfied with what I provide. You should mention this to your caterer and he/she should compensate you for your troubles.

    Why not buy fire resistant tarps from a welding supply store? Normally, tarps used for the project you are talking about, are thoroughly soaked with water to prevent burning.

    Well I can say from experience that you might be further ahead to do it yourself. I know my husband and I charge 800 dollars for 150 lb pig..and we're the cheapest around our area.     Is there a conservation area (do you guys call those "state parks" down there?) near you? Sometimes, they'll allow it.



    You could attempt to use an empty store/office/restaurant site (if you have any of those) -- we were seriously looking at a site that used to be the office floor of a long-gone bank -- the room is entirely glass, and it would be incredible, and it would have allowed us to use any caterer we wanted to. The downside was the amount of stuff we'd have to bring in to make it user friendly (flooring, etc.). Unconventional locations can be fun :)



    Is there another church in the area in which she could just use the reception hall?



    One of the problems with being about to outsource the caterer is that it's unlikely that there are appropriate catering facilities on site (if our experience has been anything to go by) -- caterers who have exclusive rights to a particular venue also often have exclusive access to the kitchens.



    That said, what about renting a boat, and doing a cruise-reception? Or a park? Local football stadium (if they're sporty types)? Maybe a hangar at a small airfield (the bride and groom could arrive/depart by helicopter)?

    The best way to achieve what you're needing is to look beyond traditional banquet halls. I don't know what the budget is, and that can and will affect your selections. However, try local hotels. A lot of times local historical places will allow receptions/weddings. I'm not from North Carolina, so I don't have any knowledge of the area. The best thing to do is to start doing searches for "reception venues Durham North Carolina" and see what pops up. I know that's not much help, but it's how we found our location. You can also try community centers, auditoriums, sometimes even museums have spaces you can use. You just have to think outside the typical reception venue box. It can be done, and with a little planning I'm sure you can find the perfect place!How do you find a wedding reception venue WITHOUT a caterer?
    There is a catalog called the Perfect Wedding Guide that has a list of reception locations and it gives general info about each in a chart.     You may have to call the different vendors directly to find out if you can bring your own caterer or see if their website has the information so that adds a bit of work. But you have a list of locations to start with.
    Check with your local VFW or American Legion. Usually they have a hall to rent, but don't have a "house caterer", so your caterer can just do his/her thing there.



    You may have to pay for a bartender and/or security provided by the organization, but that can be a plus. Hall fees vary, obviously, depending on what they offer, the amount of time you need it for, etc.



    Other social organizations like the Elks club also have their own facilities, and often rent them out for parties, etc., too.

    Throughout the whole country, you can search out VFW Halls, or any other type of "service club" (Lions Club, etc.) These types of halls will let you bring in your own caterer. As will any type of historic building that is open for rentals.
    When you want to bring in your own caterer, you are going to be relegated to places like Elks Halls or your local Fire Hall or perhaps your local park might have a space.



    Pop open the yellow pages in your area and see what is around.
    Look into museums, they usually allow wedding receptions, and don't have house caterers.

    I'm not sure about the caterer situation, but I am from St. Charles, IL (West Suburbs) and there is a great place out here for a reception venue called the Hotel Baker. It has a room called the Rainbow Room which features a glass tiled floor with lights underneath and the ceiling opens up very high.     I have never heard of the company and think you may well have lost your money my friend. Get onto Glasgow Council via the web and see if anyone there can check it out for you. Failing that send an email to the Glasgow Police and ask them to check for you. Never ever send money before you have checked and re-checked the facts.

    No dear, you don't hire vendors where you live. You hire vendors in the city where you're getting married. That's also where you get your marriage license, not from city hall at home. You need to search on weddingwire.com for caterers located where you're getting married, same for your photog, DJ, florist etc. I got married 5 hours from where I live last year and spent hours on the phone talking to vendors and interviewing them before I hired anyone. There's no reason you need to consult with a caterer multiple times before the wedding, just plan to make one trip to the area to meet with them and anyone else you want to hire so you can meet them in person before paying a deposit.



    You can't bring a caterer with you from home, because once they arrive they won't have a place to cook or know where to buy your food!
    You hire a caterer in the location that you are having the wedding. Caterers have to be licensed food handlers in most, if not all states, and few are licensed outside of their state of residence.

    That said, if you live in NYC or NJ and are getting married in FL, there are caterers who are licensed for both states as they often fly down to cater parties for the wealthy. They have kitchen facilities already arranged, so not a problem.
    We had our wedding in Alabama, from Iowa. We got all of our vendors from Alabama: caterer, florist, photographer, baker etc etc etc.



    First, i did research on the local vendors. Decided which fit our general needs. Then i called each with a list of questions and narrowed it down to 2 vendors from each "category". We had to go to look at venues anyway. So we went for a week...made initial appointments with all of the vendors we were seriously thinking about and made our final decision for each at the end of that week. After that, we made one last appointment with each of our "finals" and went over the basics of what we wanted. They were very good at getting where we were coming from. From there, we did all of our interaction by email or phone call. We went down one other time about a month before our wedding so, at that point, we checked in with each to make sure everything was on track. But everything really went off without a hitch regardless of being a destination wedding.
    Your caterer should be based where the wedding is taking place. Otherwise, how are they supposed to cater a wedding if they're thousands of miles from their kitchen and suppliers and staff?



    When you have a destination wedding, you may not be able to speak to every vendor in person. Fortunately, there are these things called "phones" and "email" that allow you to communicate with people in distant locations. I highly recommend giving those a try.

    HIre a local caterer, they will have everything they need to cook, serve, clean up, etc. Otherwise you're paying for rentals.     Preferred caterers means that the hall has worked with them in the past and they most likely have a business arrangement set up with the hall. The preferred caterers may pass on a discount to you (or a kick back to the hall). They may have a level of professionalism that the hall likes to maintain. I would call the hall and double check what their "preferred" criteria includes and what their expectations are. Better to find out now.
    Sometimes this is the "nice" way that the venue says you have to use their caterer list. If your contract says you have to use a caterer off their list, then you have to. Even if it says "preferred".

    No, i just went through this.... They are just helping you out so you don't have to run around like a chicken with your head cut off looking for reliable caterers/vendors. Those caterers have done work with the venue before so that would be a good choice since they know how the venue operates.
    All it means is that the place has worked with these caters in the past and they did a really good job. However, to be on the safe side I would still ask the hall manager.
    Phone them up and tell them exactly who you want to do the catering, these preferred caterers are just on the wedding day gravy train, you can guarantee they will be more expensive !
    If you're not clear about a clause in any contract, ask what this means. Preferred means these are companies they have either worked with them in the past - or are somehow affiliated with their parent company - or are "connected" with them in some other way.



    It also allows you to insist on using a different caterer - but that privilege may come with an extra fee.



    But always ask for clarification. If "preferred" means that you are required to work with one of these vendors - then make sure it's crystal clear from the get-go.



    Same with florists, DJs, Bartenders, etc. etc. etc. etc.



    If you don't know what something means, ask. Always ask.
    Some places give you a list of preferred vendors as a suggestion. Other places give you a list of preferred vendors because those are the only ones that they will allow in their facility.

    The best way to find out is to call the reception venue. You may also want to find out if they have any other "preferred" vendors. You wouldn't want to book your photographer, florist or DJ only to find out they are not allowed in that facility.

    Usually they have a "preferred" list because both venue %26amp; caterer already have shown proof of insurance coverage and they have worked together in the past.
    Generally, "preferred" means they work with these caterers a lot and have a good working relationship with them. These caterers probably know all of the rules and the ins-and-outs of working in that particular venue. Most of the time this does not mean you have to use them, but I would check with the venue just to clarify. If you choose not to use one of them, you may have to have a meeting with your caterer and your venue host together to iron out any details. Definitely clarify with the venue.

    Right now there are 86 people confirmed, but we have a pretty good sense that six of them might not show up. The dinner is buffet style, so either way there will be ample food for all.     You never wanna say less because they might give you small portions. It's always better to say more people. I would tell them 90 people, just in case cuz it won't look good if you run out of food.

    Even though it is buffet style, some things like hor'deourves the caterers do count out two a piece per person kind of deal and charge you for this. Six people may be the difference between one more chicken breast being cooked, or how many heads of asparagus there will be. Caterers do try to accommodate for more than the expected number incase Aunt Joan who said she was coming alone decides to bring the guy she met last week, but it's always best to give the exact number of yes replies. Don't assume cause then it could make an awkward situation if for somethings they are short. Also with place settings six people is almost another full table. So I would give the exact amount.
    Tell them that you have 86 Expected, and a guarantee of 80. Tell them what you told us. If they are good at what they do, they will be prepared for more than 86 (usually 5% over that). They will know what to do, they handle this all the time.

    If you tell them 80, then the problem might be not the amount of food. If those 6 people do show up, where will they sit? Will they have a table?
    How is the caterer charging for the buffet? If it's per person, maybe say 83? Split the difference? I've heard horror stories of caterers flipping out because more people showed up than they were planning for. It might be good to just explain that you expect 80 but there are 6 more who are iffy and see what they suggest.



    Remember, the caterer isn't just being greedy. If the available food seems skimpy for the crowd involved and someone asks who catered the event, it could affect future business. People talk. Especially when they can be critical.
    For the woman who dont understand why they would say yes, and not come.... Unfortunately people RSVP to events and do not show up. I did such a thing just this weekend. I had knee surgery, and I had planned on doing way better with the surgery than I am doing. I was just in too much pain to go to the wedding.



    If you are being charged by the plate for food, give them the number you have confirmed. If you do not and they all show anyway, you run the risk of not having enough food.
    You cater always for the amount of people invited, not a speculation number. While some people don't show up who RSVP yes, some people do show up who didn't RSVP at all.



    If 86 are confirmed I would actually go above that number, to like 90 or 95.



    Buffet doesn't mean ample or endless food.



    Buffet will still be a buffet for the amount of people you have paid for and you could run out and not have enough for everyone (uber embarrassing)

    Where are you located at. The first thing that you will want to do is find out if your area can handle another restaurant. If there are none in your area that is anything like you want to do, then go for it, and give it a try. Make sure that you advertise really well before you open. Explain what you have, what your services will be etc etc

    We're planning a Sept 2008 Wedding at Boldt Castle. We would like to have a casual BBQ after. They pick you up in a limo and take you to their hall and serve you and give you roses and stuff, tons of fun - and free! Summitt Catering does great work with buffet and sit down and they work at various venues in the South Jersey area.

    That's only $10 per person, which is almost impossible for any good caterer to do. You probably need to rethink your budget so that you either can afford more per guest or cut your invitation list.

    I'm a great cook and taking a stab at catering a small wedding of 60. It's going to be mexican food, rice beans, enchiladas, carnitas, fruit salad, flan, a mexican ceasar, and maybe tamales. What would you charge per a person. It's buffet also.Caterers... how much would you charge for a wedding (per a person)...?
    i would do it for $15-$20 per person. mexican food is generally pretty cheap. think about when you go to a mexican restaurant. it's never $30 for a meal!
    This is a hard question to answer and one that you need to look at in light of many different factors. How much will the food cost per serving? What else will you need in order to cater this wedding? (serving trays, utensils, etc.) Will you be including a fee for your attendance at the wedding to ensure food is served as it should be? There are many factors to look at before a "per person" charge can be assessed. i think you should sit down and budget a lot of these factors and that should give you a reasonable answer. Per-Person fees can range anywhere from $6 for a small appetizer party to $100 and above for a full dinner.Caterers... how much would you charge for a wedding (per a person)...?

    Typically buffets are less expensive than served meals, but I would say you have alot of work cut out for you. I would first make a plan. Scope your your supplies and figure out how much the food will cost just to buy it! Then look at how much the supplies are going to be to prepare the food (if special things are required). I would then figure out about how much work and preparation it would take for you to prepare each course. If you yourself are going to do it or if you are going to have to pay for people to help you. All of these things you should consider when charging the entire cost.



    For me to put a dollar amount on the actual meal is hard. I would guess you could probably do... between 25 and 30 per plate. And that's just a guess! It would depend on the ingredients that you would use.



    Call around to other local caterers and check their pricing. Not ask them what they would charge, but give them what you want and see if they could give you an estimate and you could ballpark yours around theres.

    but just enchaladas flan rice fruit salad i would say about 25.00 will cover it all very non expensive foods you can also ask her she can buy all the food and you will charge 100 dollars to cook it all up on that day
    Figure out how much it actually costs you to make all that; then figure out how long it'll take you to make it and approximate how much your time is worth; figure out the cost of serving trays and delivery costs, attendants for the buffet lines, etc.; and add it all up to get a base cost. Then add some extra so you actually make a profit.
    $15-$20 per person, all of that food is pretty cheap to make and is not that difficult. I don't think anyone would pay more than that for that kind of a menu anyways.
    How many servers do you have? Does it include bar? Does it include linens and plates...silverware... cost of food?
    20 - 25 per person... assuming you will have some finger food snacks as well. Chips and dips, cheese and crackers...

    They have really famous cheesecake, but to be honest, I've had better - I've made better. The one I bought from them once was a bit crusty on top, a bit dry, and very overly priced.

    The actual flavor was pretty good, but the other qualities made me not want to buy another.



    Many people swear by them, but I can get better in the grocery store.
    I love Junior's--it's famous for its cheesecake, but they do have restaurants.



    The original is located in Brooklyn and they have locations in Grand Central and one in Times Square (this one has a restaurant too).

    Any hall you rent will allow you to use the caterers of your choice if they do not provide a catering service. Check into local halls, VFW, or churches. If you go to a hotel or convention type site, they will most likely provide catering services and require that you use theirs.

    Hey, I used Katie's Cakes and Catering for both cake and catering out of Havana. That's not exactly Valdosta, but I used her and I'm over in Tallahassee. She was amazing and the cake was SO beautiful.

    Call your favorite bbq restaurant. Most places like that do catering for events and are much cheaper than a wedding caterer. Does anybody know of any good bbq caterers that would do our meat for our wedding in November 08, Dallas.?
    County Line is awsome. They are in Garland, but might cater in Duncanville. It's worth calling them. 972-278-4227



    Or try Pappas BBQ. They are quality as well. Their location is west of Lovefield.
    Our work uses Dickey's for all of their catering. They always do a good job.
